The Fleur de Lys Series is a local creation born from the collaboration between Kakushin and Québec bladesmiths Noah Vachon and Jérémie Yelle. Designed and forged entirely in Québec, Canada, these blades bring together Japanese-inspired geometry with traditional Québec craftsmanship, creating knives that celebrate both exceptional cutting performance and the talent of local makers.
At the core of every blade is 80CRV2 high-carbon steel, chosen for its outstanding toughness, excellent edge stability, and remarkably easy sharpening. The core is forge-welded into a striking San-Mai construction using 410 stainless steel cladding with a nickel layer, before being acid etched to reveal the dramatic contrast between each layer. The result is a blade that blends rugged performance with refined visual depth.
Each blade features a beautifully distal tapered spine that gradually thins toward the tip, creating exceptional balance, agility, and precision during use. The spine and choil are carefully rounded and polished by hand for outstanding comfort, while the overall geometry remains thin behind the edge to deliver the effortless cutting feel enthusiasts expect from high-performance kitchen knives.
Sold blade-only, every piece is intentionally left unfinished until its future owner selects a handle from Kakushin's available inventory. Whether paired with a traditional wa handle, stabilized wood, or a one-of-a-kind custom creation, the final knife becomes a reflection of its owner's personal style. Once assembled, every knife is professionally balanced, sharpened, and finished at our workshop before leaving for its new home.
More than simply inspired by Japanese knives, the Fleur de Lys Series embraces the philosophy behind them—refined geometry, elegant tapers, purposeful performance, and meticulous craftsmanship—while proudly carrying the identity of Québec forging. It is a collaboration that bridges continents without imitation, combining Canadian craftsmanship with Japanese influence to create something entirely its own.
Every blade is individually forged, ground, heat treated, and finished entirely by hand. Slight variations in the San-Mai pattern, etched finish, grind lines, and overall appearance are not imperfections, but the unmistakable signature of genuine handmade craftsmanship.
Kakushin can handle the blade-to-handle assembly for you at our shop. If you're new to the custom knife world and want to confirm the fit and sizing of a handle with a specific blade, feel free to reach out!
