This 240mm Kiritsuke is a true one-of-one custom, designed from the ground up after repeated requests for a longer blade with a tall heel and commanding board presence.
We worked directly with Nguyên in Hanoi, Vietnam, to bring this concept to life. Known for his bold geometry, confident forging, and willingness to push unconventional designs, Nguyên shaped this Kiritsuke with intent—long, powerful, and unapologetically functional.
The profile balances authority and control: a long, assertive cutting edge paired with extra height at the heel for knuckle clearance and stability, while the Kiritsuke tip offers precision and finesse when needed. It feels planted during heavy prep, yet agile enough for detailed work.
At the core is 52100 carbon steel, selected for its proven performance. It sharpens easily, takes an extremely refined edge, and holds it through demanding use. Thin behind the edge and smooth through food, it delivers that clean, confident cutting feel that experienced users immediately recognize.
The blade is clad in stainless steel, with nickel and copper shims layered between the core and cladding. These shims create crisp visual lines that subtly separate the materials while adding depth and contrast—restrained, deliberate, and unmistakably custom. The stainless outer layers add practical corrosion resistance without compromising feel or character.
This knife is part of a small, limited run by Nguyên, and every piece is hand-forged and hand-finished. Variations in tone, Damascus flow, and contrast naturally occur from blade to blade, meaning each knife has its own character.
