This 180mm Nakiri marks the first tall-heel version, created directly in response to popular demand. The goal was simple: take the dark, moody character people loved and translate it into a vegetable-focused profile with added height—more knuckle clearance, more board confidence, and the same intensity in hand.
We went back to the forge with a clear direction: deep, almost blackened tones, dark Damascus waves, a brut-forged upper section, and a copper-Damascus lower half that adds warmth and contrast without overpowering the blade. The long, flat cutting edge delivers that unmistakable Nakiri push-cut precision, while the taller blade height provides generous knuckle clearance and a strong, planted feel on the board.
At the core sits 52100 carbon steel, chosen for its proven performance. It sharpens easily, takes a wicked edge, and moves through dense vegetables with a smooth, controlled glide. Thin behind the edge, clean through product, and deeply satisfying to use.
This knife is part of a small, limited first run by Nguyên, with every blade hand-forged and hand-finished. Variations in tone, Damascus flow, and contrast naturally occur from piece to piece—no two are identical.
