With unwavering dedication, he personally oversees every step of the knife-making process. As a third-generation blacksmith, he brings an impressive 84 years of accumulated expertise in the art of crafting exceptional knives. 

Kiritsuke are known as a multipurpose traditional Japanese chef knife. A Kiritsuke is visually appealing due to its unique shape and extremely popular as a primary knife in any kitchen to cut meats, vegetables, fruits and many more. Several makers now produce double-bevel Kiritsukes, often called Kiritsuke Gyutos which are ideal for users who appreciate the striking aesthetics of the profile but need the added versatility and ease of sharpening of a double bevel grind.

Traditionally, these knives were only used by the Executive Chefs as a symbol of status.
