This 210mm Gyuto arrives as a bare blade at our request—available unmounted exclusively at our request—offering the ultimate high-end canvas to pair a master-level forge with a custom handle of your own choice. Forged with a premium SG2 (R2) powder metallurgy stainless steel core hardened to an elite 62-63 HRC, this advanced micro-carbide steel delivers a laser-like, enduring edge that holds its sharpness far longer than standard stainless options.
