This Yoshikane SKD Sujihiki 240mm brings that classic Sanjo feeling: clean, precise, and beautifully executed without relying on flashy details.
Hand-forged in Sanjo, Japan, using SKD semi-stainless steel, it sits in that ideal middle ground between carbon-like performance and easier day-to-day care. You get a sharp, responsive edge with excellent edge retention, while the semi-stainless construction offers a little more forgiveness than a fully reactive carbon blade. At around 63 HRC, it has the hardness and refinement Yoshikane is known for, while still remaining enjoyable to sharpen and maintain.
The Sujihiki profile is designed for clean slicing. Whether you’re portioning proteins, slicing cooked meats, trimming larger cuts, or preparing fish, the long and narrow blade helps create smooth, controlled cuts with minimal drag. At 240mm, it offers plenty of length for confident slicing while still feeling manageable in a home or professional kitchen.
The blade has more substance than an ultra-light laser, giving it a steady and controlled feel in hand without becoming heavy or bulky. The thicker spine near the heel gives the knife that strong Yoshikane presence, while the taper toward the tip helps it move smoothly through ingredients with precision and control.
The nashiji finish gives the blade a quiet, traditional texture — not too polished, not too rustic, just very Yoshikane. The finishing is where this knife really shows its level: the spine and choil are nicely rounded and polished, making it feel refined the moment you pick it up.
This is not a showpiece trying to grab attention. It’s a serious slicing knife made for people who appreciate clean geometry, excellent steel, and the kind of understated performance Yoshikane is known for.
