This Yoshikane SKD Santoku 165mm is the kind of knife that doesn’t need to be loud — it simply shows the experience and precision behind the work.
Forged in Sanjo, Japan, from SKD semi-stainless steel, it gives you that crisp, responsive cutting feel people often love in carbon steel, with the added practicality of better corrosion resistance. Heat-treated to around 63 HRC, it holds an edge very well while still being straightforward to maintain and sharpen — a balance Yoshikane has refined over decades.
The Santoku profile is one of the most versatile shapes in the kitchen. At 165mm, it feels compact, controlled, and easy to use for everyday prep, whether you’re cutting vegetables, proteins, herbs, or smaller ingredients. The blade has enough height for comfortable knuckle clearance, while the slightly curved edge gives you a smooth flow for slicing, chopping, and push-cutting.
The spine is approximately 4mm at the heel, giving the knife a solid and confident feel in hand. From there, it tapers down by roughly 50% toward the front, reducing weight where it matters and giving the knife a smoother, more precise feel through ingredients. At around 150g, it stays nicely balanced — present in the hand, but never heavy or tiring.
The nashiji finish is understated and traditional, adding texture without taking attention away from the clean lines of the blade. What really stands out is the finishing: the spine and choil are carefully polished, with no sharp edges or rough transitions. It’s one of those details that might not jump out in photos, but you notice immediately once the knife is in your hand.
