Since 2013, from their workshop in Amagasaki City, Hatsukokoro has partnered with some of Japan’s most skilled but often uncredited smiths, sharpeners, and handle makers. Their house brand exists to bring these masters’ work into the spotlight, letting the knives themselves tell the story.
Introducing the Limited Edition Yorokobi Series – 240mm Gyuto—a superbly balanced, high-performance knife that combines technical mastery with striking aesthetics. Forged from Rainbow Damascus enhanced with red-copper shims, the blade features vibrant, multi-tonal layers that shimmer subtly under the light, complemented by a rugged kurouchi finish that adds texture and depth. Unlike the smaller edition, the spine remains solid and unexposed, maintaining a clean, classic silhouette while still highlighting the dramatic Damascus pattern along the sides of the blade.
True to the Sanjo tradition, the blade begins with a robust spine that tapers into a razor-sharp, agile edge. Its geometry is designed for precision and control, making fine prep work effortless while retaining the solid feel Sanjo knives are known for.
The Yorokobi 240mm Gyuto is both a serious kitchen tool and a collector’s piece. Each knife is produced in very limited numbers, ensuring that your blade is truly unique. The octagonal stabilized-wood handle complements the blade’s bold character while providing exceptional comfort during use.
