This 240mm Sujihiki is supplied as a bare blade exclusively for custom assembly, allowing you to create a truly one-of-a-kind knife with the handle of your choice. Forged around a VG10 stainless steel core and heat treated to approximately 60–61 HRC, it offers an excellent combination of long-lasting sharpness, corrosion resistance, toughness, and easy maintenance. The long, slender Sujihiki profile is purpose-built for effortless slicing, gliding through brisket, roasts, fish, and other proteins in long, uninterrupted strokes that help preserve both texture and presentation.
Visually, the blade is defined by Saji's signature Kuroshiage finish. Rather than polishing away every trace of the forging process, the dark forged scale is intentionally preserved, giving the knife a rugged, handcrafted appearance that makes each blade subtly unique. The textured finish also serves a practical purpose by helping reduce food adhesion as you slice. Paired with a finely ground edge and elegant blade profile, this Sujihiki delivers the smooth, low-resistance cutting feel that has made Japanese slicers the preferred choice for precise carving and presentation.
