Offered as a bare blade exclusively for custom assembly, this 180mm Gyuto allows you to pair one of Japan's most respected handmade blades with the handle of your choice. At its core is premium VG10 stainless steel, heat treated to approximately 60–61 HRC, providing an excellent balance of edge retention, toughness, corrosion resistance, and easy maintenance. The 180mm Gyuto offers a more compact take on the classic Japanese chef's knife, making it an outstanding choice for cooks who want the versatility of a Gyuto in a lighter, more agile format.
