This is one of those knives you don’t fully understand until it’s in hand.
From the Shinkiro line, forged by Takahiro Nihei in Fukushima, this 240mm Gyuto is built around Aogami Super carbon steel — one of the highest-performing steels out there. It takes a very aggressive edge, holds it for a long time, and delivers that raw, direct cutting feel that people look for in high-end carbon.
The blade features an iron-clad Damascus construction with a kurouchi finish, giving it that darker, almost smoky look with subtle layering underneath. It’s not flashy — it’s depth. Over time, it develops its own patina, making each piece even more unique.
What really sets this one apart is the build. This is not a laser — it’s a proper workhorse. Thick spine starting around 4.20mm at the heel, tapering down to about 2.75mm toward the tip. That distal taper gives you a strong, planted feel with enough refinement up front for precise work. Paired with a taller 52mm heel, it has great board presence and plenty of knuckle clearance.
On the board, it feels solid and confident, but still moves clean through product — that balance between power and performance Nihei is known for.
This is not an entry-level piece. It’s a hand-forged knife with weight, character, and a very distinct feel — the kind of knife you grow into. If you know Nihei… you already know.
