The Purpurnyy model is a unique mid-size chef knife, akin to the Japanese Gyuto but with a distinctive Russian influence. Designed in early 2022 in collaboration with an independent Russian blacksmith named ваш Иван (Ivan), it is a true piece of art. The knife undergoes a "Frozen Sharp" cryo-treatment at -300°, a skill-intensive process that enhances wear resistance, ensuring the edge remains sharper for longer.
Featuring a progressive octagonal handle with rounded edges, it offers exceptional comfort and a great feel in the hand.
The most notable feature is the grind. While modeled after the Gyuto, the blade grind includes a single bevel at the primary edge and a 50/50 double bevel at the secondary edge. Although aligned for a right-handed cook, the knife has an ambidextrous handle, providing a unique cutting experience due to its specialized fabrication.
