Handcrafted in Miki, Japan, by a skilled father-and-son team, Okeya knives offer an impressive combination of traditional Japanese craftsmanship, performance, and exceptional value.
Forged from Ginsan #3 (Silver 3) stainless steel, this 270mm Tanto-Tip Sujihiki offers excellent edge retention, corrosion resistance, and ease of maintenance. Hardened to approximately 61 HRC, the blade provides a great balance between sharpness, durability, and ease of sharpening. Its distinctive Tsuchime (hammered) finish adds character, while the thin grind behind the edge and approximately 2mm spine ensure smooth, precise cutting with minimal resistance.
The 270mm Tanto-Tip Sujihiki is designed for effortless slicing of larger cuts of meat, roasts, brisket, fish, and other proteins. Its long, narrow blade allows for clean, continuous slicing motions, reducing the need for sawing back and forth while preserving the texture and appearance of your ingredients. Unlike traditional Sujihiki knives with rounded tips, this model features a distinctive Tanto-style angular tip, giving it a bold appearance while providing additional precision for detailed trimming and cutting tasks.
Completing the knife is a beautiful Half-Burnt Oak Wa-handle, featuring a striking contrast between natural oak grain and charred wood. This traditional Japanese-style handle is lightweight, comfortable, and well-balanced, adding a unique rustic touch to the knife's overall appearance.
Whether you're a professional chef or a passionate home cook, this Okeya Sujihiki delivers excellent slicing performance, distinctive Japanese styling, and outstanding value for the price.
