Nigara Hamono has been making blades in Hirosaki for generations, and the Anmon series is a great example of what they do best: high-performance steel, a bold finish, and a knife that still feels extremely refined in use.
Built around an SG2 stainless core, the Anmon offers excellent edge retention, strong corrosion resistance and very little maintenance compared to traditional carbon steels. The blade is thin behind the edge, precise through food and has that clean cutting feel you expect from a properly made Japanese knife.
Visually, the Anmon is hard to miss. Its signature raindrop Damascus pattern is inspired by the Anmon waterfalls near the Shirakami mountains, with each blade showing slightly different movement and detail in the steel.
For this version, we paired the blade with one of our premium stabilized wood and epoxy Wa-handles. Each handle has its own grain, colour and epoxy pattern, giving the knife a much more custom look without pushing it into custom-handle pricing.
The stabilization helps make the wood more resistant to moisture and movement, while the traditional Wa-style construction keeps the knife light, comfortable and nicely balanced in hand.
That’s really what makes this combination such a good value. You get the performance and craftsmanship of Nigara’s Anmon series, finished with a unique premium handle, while keeping the overall price point surprisingly accessible.
