This one-of-one 210 mm Gyuto is a unique expression of Nguyên’s work, forged as a standalone piece rather than part of a series.
Hand-forged in Vietnam by Nguyen in the Hanoi region, this blade features a 52100 carbon steel core clad in stainless steel with a nickel Damascus pattern, finished with a traditional kurouchi on the upper blade. The combination was chosen for its balance of performance, durability, and understated visual contrast.
The 52100 core offers a fine grain structure with excellent edge stability, taking a very keen, aggressive edge while remaining easy to sharpen. The stainless nickel Damascus cladding helps reduce maintenance, while the kurouchi finish protects the upper blade and contributes to improved food release during prep.
As with many hand-forged Vietnamese blades, this Gyuto is built with character and intent rather than factory uniformity. Geometry and finish reflect the forging process, and the knife truly shines once properly tuned, thinned, and sharpened.
