A piece of art. Handcrafted in Sakai, Japan by the talented blacksmith Satoshi Nakagawa, this 180mm Bunka knife is a stunning example of traditional craftsmanship blended with modern performance. After spending 16 years apprenticing under the legendary Kenichi Shiraki, Nakagawa-san has earned a reputation for producing blades of exceptional quality and refinement. Since establishing his own forge in 2021, he has become known for his ability to work with a wide range of steels, including traditional carbon and advanced stainless steels like Ginsan (Silver #3).
This Bunka features a San Mai construction with a Ginsan core, clad in stainless steel and finished with a subtle Kasumi polish that highlights the clean, graceful lines of the blade. The edge geometry ensures precise, buttery-smooth cuts, while the polished spine and choil provide a comfortable grip.
Ginsan, or Silver #3 stainless steel, offers the sharpening ease and performance of high-carbon steels like Shirogami #2 but with the added benefit of rust resistance, making it ideal for cooks who want minimal maintenance without sacrificing cutting power. With a hardness of 60–61 HRC, this knife takes a razor-sharp edge and holds it impressively well. The blade is double-edged with a 50/50 grind, making it suitable for both right- and left-handed users. Paired with an octagonal teak wood handle and a black buffalo horn ferrule, it’s not only a high-performance tool but also a beautiful addition to any kitchen. As with all hard Japanese steels, it's best to avoid cutting through bone or frozen items to preserve the delicate edge.
