Handmade in Miki, Japan by Misuzu Hamono with a unique lacquered magnolia handle and brass ferrule, this model was heat-threated a little lower compared to other VG10 blades to offer a good balance between edge retention and durability.
Unlike traditional Sujihiki knives, this model is very light in the hand thanks to the slim blade and small handle. With a serrated end, many like to use this model to cut their sandwich in half which will nicely slice the break and even the inside ingredients thanks to the serrations. Also great when you need to slice delicate proteins that require more precision than force, this Sujihiki is a one of a kind able to be manipulated with precision.
