These knives feature a core of White Steel #2 and are forged with a unique hardening process called '松炭焼 MATSU-ZUMI-YAKI.' This method employs pine charcoal, which is known for its superior ability to reach high temperatures and ignite quickly, making it ideal for smelting metal. The pine charcoal prevents decarburization during the hardening process, resulting in kitchen knives that are exceptionally hard—comparable to Blue Steel #2, despite being made from SHIRO #2. Nakiri knives are highly known for their long and flat blade. They tend to be fabricated with a higher heel compared to other models and are extremely popular for chopping vegetables.
