Assembled here in our Gatineau workshop, this Hatsukokoro Kurogane Santoku is a true one-of-one. We paired the blade with an exclusive purple epoxy swirl handle, custom-selected and mounted in-house to give this already distinctive knife a completely new identity. Bold, durable, and visually striking, the handle adds depth and movement while remaining perfectly balanced in hand.
Hatsukokoro isn’t just a brand — it’s a collective of some of Japan’s most respected blacksmiths and sharpeners. Based in Amagasaki since 2013, they produce blades that stay true to centuries-old Japanese knife-making traditions: honest tools, built to work, with character you can feel.
The Kurogane series embodies that philosophy. Each blade wears a raw kurouchi finish, leaving forge marks visible and unapologetic. Thicker and more robust than many Japanese knives, it offers a grounded, confident feel and is easy to maintain, regrind, and adapt over time.

Every product listed on our website is physically in stock at our shop and typically ships within 24 hours — giving us enough time for sharpening and proper packaging.
The only exceptions are custom knife assemblies or engraving, which may require 3-5 days before shipping. Everything is done in-house, so even with the extra steps, it’s still exceptionally fast.
Canadian orders can say goodbye to unexpected duties, additional customs fees and exchange rate fluctuations; all our prices are clear and upfront.
For international orders, we take care of providing the declarations documents on items from foreign countries.
