Hatsukokoro is more than a brand name. Since 2013, the Amagasaki-based company has worked with talented blacksmiths, sharpeners, and handle makers across Japan, bringing together traditional craftsmanship with knives that are made to be used and enjoyed.

The Kurogane Series is a perfect example of that philosophy. Rooted in traditional Japanese forging, these knives embrace a raw, rustic character rather than the flawless appearance of machine-made blades. Their dark Kurouchi finish proudly displays the marks of the forge, while the slightly thicker construction gives them a solid, reassuring feel in hand.

Every Kurogane has its own personality. Small variations in the finish, grind, and forge marks are part of the charm of handcrafted knives, making each piece slightly different from the next.

For this version, the traditional blade is paired with a beautiful stabilized birch and epoxy handle. The natural grain of the wood blends with subtle resin accents, adding depth, contrast, and a modern touch without overpowering the rustic character of the blade. Each handle features its own unique patterns and colours, making every knife visually distinctive.

The 120mm Ko-Nakiri brings the charm of a traditional Japanese vegetable knife into a surprisingly compact format. With its tall, rectangular profile and relatively flat cutting edge, it's perfect for precise everyday tasks like chopping garlic, shallots, mushrooms, herbs, and smaller vegetables.

Its shorter blade makes it incredibly easy to control, especially on smaller cutting boards, while the generous blade height provides comfortable finger clearance and makes scooping up chopped ingredients effortless. Designed for push-cutting and straight chopping rather than rocking, it offers a satisfying and efficient cutting experience.

The Kurogane's slightly more substantial construction gives this little knife a reassuring presence in hand, making it feel sturdy without sacrificing manoeuvrability. While it won't replace a full-sized chef's knife for larger ingredients, it quickly becomes a favourite for smaller preparation tasks.

The only exceptions are custom knife assemblies or engraving, which may require 3-5 days before shipping. Everything is done in-house, so even with the extra steps, it’s still exceptionally fast.

Canadian orders can say goodbye to unexpected duties, additional customs fees and exchange rate fluctuations; all our prices are clear and upfront.

For international orders, we take care of providing the declarations documents on items from foreign countries.
