At its core is Aogami Blue #2 carbon steel clad in stainless steel, combining the excellent edge retention, razor-sharp cutting potential, and easy sharpening that Blue #2 is known for with the added convenience of stainless cladding. While the exposed carbon steel edge still requires proper care and drying, the stainless exterior makes everyday maintenance considerably easier. The clean, polished Migaki finish keeps the blade looking elegant and understated, allowing its performance and craftsmanship to speak for themselves.

With a spine measuring just 1.8 mm, the Kaijin is impressively thin and agile. Its refined geometry glides effortlessly through vegetables, proteins, and herbs with very little resistance, delivering the kind of smooth, precise cutting experience often associated with much more expensive knives. The 180mm Santoku profile offers an excellent balance between blade length, control, and versatility. Its generous blade height provides comfortable knuckle clearance, while the gently curved cutting edge accommodates everything from controlled push cuts and fine slicing to light rocking motions. It's an exceptionally capable everyday knife, whether you're preparing a quick dinner or spending hours at the cutting board.

For this particular release, we've taken the already popular Kaijin blade and paired it with a bold black and yellow epoxy handle featuring sparkling accents, creating a combination that feels both modern and unmistakably custom.

The deep black base contrasts beautifully with vivid yellow details, while the subtle metallic sparkles catch the light from different angles, adding depth and character without overwhelming the overall design. Every handle features its own unique distribution of colours and patterns, making each finished knife slightly different from the next. The result is a distinctive, premium-looking combination that contrasts beautifully with the Kaijin's minimalist polished blade.
