Based in Amagasaki City since 2013, the company works closely with some of the most respected blacksmiths, sharpeners, and handle makers in Japan. Their house brand, Hatsukokoro, features knives crafted by highly skilled—but often undisclosed—artisans, letting the work speak for itself.
One of the standout lines in their collection is the Hikari Series, built from SLD semi-stainless steel. Originally developed by Hitachi for cutting other steels, SLD offers an edge that holds like high-carbon but with much easier maintenance. *It’s not fully stainless, so a quick wipe and dry after use—especially with acidic foods—is all it takes to keep it looking great.
What really sets the Hikari Series apart is its grind. These are true lasers—ultra-thin, lightweight, and precise, with a clean polish and a visible lamination line that adds to the visual appeal. The octagonal stabilized birch wood with white spacer handle completes the package with a sleek, elegant feel in hand.
As for the shape, the Gyuto is the Japanese take on a Western chef’s knife—versatile, well-balanced, and ready to tackle just about anything. The only exceptions are custom knife assemblies or engraving, which may require 3-5 days before shipping. Everything is done in-house, so even with the extra steps, it’s still exceptionally fast.
Canadian orders can say goodbye to unexpected duties, additional customs fees and exchange rate fluctuations; all our prices are clear and upfront.
