Since 2013, from their base in Amagasaki City, Hatsukokoro has worked with talented blacksmiths, sharpeners, and handle makers across Japan. Their collections bring together the work of these skilled craftspeople while letting the knives themselves remain the focus.
The Kurozome Series is one of Hatsukokoro’s most visually striking collections. Built around an SLD semi-stainless steel core hardened to approximately 61 HRC, these blades offer an excellent balance of edge retention, toughness, and relatively easy sharpening. SLD is especially appreciated for giving a cutting and sharpening feel closer to carbon steel while offering considerably better corrosion resistance.
Surrounding the cutting core is layered Damascus cladding finished with Kurozome’s signature dark, smoky appearance. The darker treatment brings out the flowing Damascus pattern and gives every blade its own subtle character. Paired with octagonal ebony handles, the result is a refined set that feels traditional, modern, and distinctive at the same time.
This 5-piece set brings together five complementary profiles, giving you a complete lineup for everything from larger prep work to detailed cutting.
The 210mm Gyuto is the all-purpose workhorse of the set, ideal for slicing proteins, chopping vegetables, and everyday prep.
The 205mm Kiri-Sujihiki combines the long, narrow profile of a slicing knife with an aggressive kiritsuke-style tip, making it excellent for clean protein slicing and precise cuts.
The 170mm Santoku offers a compact and highly versatile shape for vegetables, meat, and general kitchen work, while the 170mm Bunka provides similar versatility with a more pointed tip for detailed work and precision cuts.
