Following the success of the original Green Goblin in M390, we asked Nguyên and his wife in Hanoi to create a second interpretation—one that would appeal to cooks and butchers who appreciate the unmatched sharpening experience and cutting feel of high-carbon steel.
The result is this Green Goblin Go-Mai, hand-forged around a 52100 high-carbon steel core wrapped in a striking five-layer (Go-Mai) construction. Known for its incredibly fine grain, 52100 has earned a legendary reputation among knife enthusiasts for taking an exceptionally keen edge with remarkable ease. While it won't match the extreme wear resistance of M390, it rewards the user with faster sharpening, a more responsive edge, and the satisfying cutting feel that only carbon steel can deliver.
Just like its M390 counterpart, this boning knife was intentionally designed with a stiff blade rather than a flexible one. The goal was maximum precision when trimming silver skin, separating muscles, removing fat, and making clean, controlled cuts. The rigid geometry offers outstanding accuracy and feedback, making it a true precision tool.
As with any premium high-hardness carbon steel knife, this is not designed for cutting through bones or twisting against hard materials. The blade is optimized for precision butchery, where its thin geometry and razor-sharp edge truly shine. Used as intended, it delivers effortless cutting performance and is incredibly easy to bring back to a screaming-sharp edge whenever needed.
The full-tang construction is fitted with a beautifully contoured green stabilized wood handle, secured by solid brass rivets. The bold green scales inspired the name Green Goblin, while providing excellent durability, moisture resistance, and a secure, comfortable grip during extended use.
Every knife is hand-forged, hand-ground, and hand-finished by Nguyên and his wife in Vietnam. The Green Goblin Go-Mai embodies traditional craftsmanship paired with one of the most beloved carbon steels available today—a knife created for those who value ultimate sharpness, easy maintenance, and the unmistakable character of carbon steel.
