The Ginrei Series Kiri-Petty 125mm is the kind of knife that quickly becomes one of the most useful tools in your kitchen. Compact, nimble, and incredibly precise, it combines the versatility of a petty with the sharper, more defined tip of a Kiritsuke-style profile — giving you extra control for detailed prep, trimming proteins, working with herbs, small vegetables, garlic, shallots, and all those jobs where a full-size chef knife simply feels like too much.
The blade is forged in Japan using Ginsan (Silver Steel #3) — one of Mike’s favorite steels for both home cooks and pros. For those who know, Ginsan sits right in that sweet spot between performance and practicality. It sharpens easily, takes an incredibly clean edge, holds it well, and stays forgiving when it’s time for maintenance. It’s fully stainless, but on the stone and on the board, it behaves a lot like a high-end carbon steel.
Built in a san-mai construction (three-layer forge), the hard Ginsan core is supported by softer outer layers that add toughness, stability, and better resistance to chipping. It’s a construction that makes perfect sense for a smaller knife that sees constant, everyday use.
The Kiri-Petty profile is where this model really stands out. The compact 125mm blade feels fast and controlled in the hand, while the angled tip gives you excellent precision for scoring, trimming, piercing, and delicate detail work. It still handles all the classic petty-knife jobs, but with a little more attitude and a more purposeful tip.
Finished with a soft Nashiji texture, the blade has a subtle, refined look that also helps with food release while hiding fingerprints and light wear. Clean, understated, and unmistakably Japanese — this is a small knife with a surprisingly big role in the kitchen.
