The Ginrei Series Gyuto 210mm is built for cooks who want a clean, versatile Japanese chef knife without unnecessary flash. Its classic Gyuto profile gives you a comfortable balance between slicing, push-cutting, chopping, and general prep, making it an easy knife to reach for whether you're breaking down proteins, working through vegetables, or handling everyday kitchen tasks.
The blade is forged in Japan using Ginsan (Silver Steel #3) — Mike’s favorite steel for both home cooks and commercial users. For those who know, Ginsan hits that rare sweet spot between cost, performance, and practicality. It sharpens easily, takes an incredibly clean edge, holds it well, and doesn’t punish you when it’s time for maintenance. It’s fully stainless, but behaves much more like a high-end carbon steel where it really matters — on the stone and on the board.
Built using a san-mai construction, the hard Ginsan core is protected by softer outer layers for added toughness, stability, and shock resistance. It’s a simple, proven construction that makes real sense on a knife designed to see regular use.
At 210mm, the blade gives you enough length for smooth slicing strokes while remaining easy to control for everyday prep. The profile stays nimble in hand, with enough flat area for push-cutting and a gradual curve toward the tip for more natural rocking motions when needed. It’s a very comfortable middle ground between precision and versatility.
The soft Nashiji finish gives the blade a refined, lightly textured appearance while helping slightly with food release and keeping fingerprints and small scratches discreet. It’s understated, elegant, and unmistakably Japanese in character — the kind of finish that develops personality with use rather than looking tired.
For anyone looking for a stainless Japanese Gyuto that is easy to maintain, enjoyable to sharpen, and capable of serious performance, the Ginrei is an incredibly well-rounded choice.
