The Ginrei Series Ko-Santoku is one of those knives that quietly wins you over the more you use it. Compact, nimble, and beautifully balanced, this 150mm Ko-Santoku is built for everyday precision — from small vegetables and herbs to proteins and quick in-hand work — without ever feeling oversized or clunky.
The blade is forged in Japan using Ginsan (Silver Steel #3), one of Mike’s go-to steels for both home cooks and professionals. It hits that rare balance between performance and practicality: easy to sharpen, capable of taking an extremely clean edge, and stainless for low-maintenance use. It behaves very close to a high-end carbon steel where it matters — on the stone and on the board — without the downsides.
Constructed in san-mai (three-layer steel), the hard Ginsan core is protected by softer outer layers, adding toughness and stability while keeping the edge performance high. It’s a structure designed for real-world use — not just display.
The Nashiji finish brings a subtle, refined texture that helps with food release while hiding fingerprints and light wear. It’s understated and traditional, with a look that only gets better over time.
What makes this piece stand out is the custom handle, assembled in-house at Kakushin. This version features a stabilized wood handle in a blueish / green tone with flowing patterns that shift in the light, paired with a buffalo horn ferrule for a clean, elevated contrast. Each handle is unique — no two are the same — and the stabilization process ensures long-term durability, moisture resistance, and structural stability.

The only exceptions are custom knife assemblies or engraving, which may require 3-5 days before shipping. Everything is done in-house, so even with the extra steps, it’s still exceptionally fast.
Canadian orders can say goodbye to unexpected duties, additional customs fees and exchange rate fluctuations; all our prices are clear and upfront.
