The Ginrei 3-Piece Set brings together three of the most useful knife sizes in the series: the 210mm Gyuto, 150mm Ko-Santoku, and 125mm Kiri-Petty. Together, they cover everything from full meal prep to smaller precision work, giving you a compact but extremely capable Japanese knife setup.

At the center of the set is the 210mm Gyuto, the true all-purpose workhorse. It has the length for larger vegetables, proteins, and longer slicing motions while remaining light and agile enough for everyday prep.

The 150mm Ko-Santoku fills the gap when you want something smaller and quicker in hand. Compact, balanced, and easy to control, it’s ideal for vegetables, herbs, smaller proteins, and everyday tasks where a full-size Gyuto feels unnecessary.

All three blades are forged in Japan using Ginsan (Silver Steel #3) — one of Mike’s favorite steels for both home cooks and professional kitchens. Ginsan hits an excellent balance between performance, practicality, and price. It sharpens easily, takes an exceptionally clean edge, holds it well, and remains very approachable when maintenance time comes around.

It’s also fully stainless, giving you the convenience of modern stainless steel while retaining much of the sharpening feel and cutting character associated with quality carbon steels. For anyone who wants high-performance Japanese knives without constantly worrying about rust or patina, Ginsan is an excellent choice.

Each knife uses a san-mai construction, with the hard Ginsan cutting core protected by softer stainless outer layers. This adds toughness and stability while allowing the cutting edges to remain thin, precise, and efficient.

The blades are finished with a soft Nashiji texture, giving the collection its understated Japanese look. The lightly textured surface helps hide fingerprints and small cosmetic marks while adding subtle character to each blade.

What really sets this version of the Ginrei Series apart is the matching stabilized birch and epoxy handles. Natural birch grain is combined with epoxy to create depth, contrast, and subtle variation throughout every handle. Because of the natural materials involved, no two sets will look exactly the same.
