The Ginrei Series 125mm Kiri-Petty is a compact precision knife designed for the smaller jobs where a full-size chef’s knife simply feels like too much.
With its short blade and sharp Kiri-style tip, it’s excellent for trimming, peeling, portioning fruit, working with small vegetables, cleaning proteins, and any detailed prep where control matters more than blade length. It also works beautifully for in-hand work and quick everyday tasks around the kitchen.
The blade is forged in Japan using Ginsan (Silver Steel #3) — one of Mike’s favorite steels for both home cooks and professional kitchens. Ginsan offers an excellent balance of performance, practicality, and price. It sharpens easily, takes an extremely clean edge, holds it well, and remains very approachable when it’s time for maintenance.
It’s also fully stainless, making it especially well suited to a smaller utility knife that may regularly come into contact with fruit, citrus, onions, and other acidic ingredients. On the stones and on the cutting board, however, it still delivers much of the feel people normally associate with a quality carbon steel.
Built using a san-mai construction, the hard Ginsan core is protected by softer stainless outer layers, improving toughness and overall stability while allowing the cutting edge to remain thin and precise.
The soft Nashiji finish gives the blade its lightly textured, understated Japanese character. It helps hide fingerprints and small cosmetic marks while adding a subtle texture that complements the clean geometry of the blade.
This version is finished with our new stabilized birch and epoxy handle, bringing a more modern and distinctive look to the Ginrei Series. Natural birch grain is combined with epoxy to create depth, contrast, and subtle variation throughout the handle, meaning every piece has its own individual character.
The stabilization process improves the birch’s resistance to moisture and movement over time, while the epoxy adds durability and visual depth. On a compact knife like the Kiri-Petty, the handle also gives the knife a solid, comfortable feel without taking away from its light and nimble personality.
At 125mm, this isn’t meant to replace your Gyuto or Santoku. Instead, it’s the knife you reach for when you want maximum control, a fine tip, and something quick and effortless for smaller prep.
Compact, sharp, stainless, and extremely versatile, the Ginrei Kiri-Petty is a small knife that tends to get used far more often than people expect.
