The new Dao Vua V4 Sujihiki Sakimaru is what happens when a handmade favourite keeps leveling up — especially when we keep pushing the makers for improvements year after year. It still carries the rustic, handmade Dao Vua character people recognize, but this new generation is a very different knife under the hood.
One of the biggest upgrades is the steel. Dao Vua moved away from their older 5160 leaf-spring carbon steel and this V4 batch is now made from 52100 carbon steel. This is a big step forward: 52100 is more stable, holds an edge longer, sharpens beautifully, and reacts more consistently. You still get the full carbon-steel experience, but with better reliability and a more refined feel on the stones.
The V4 also brings a noticeable improvement in blade geometry. Earlier Dao Vua knives were known for being very thin, but not always properly tapered. This new version has a cleaner transition from spine to tip, giving the knife a more nimble feel and better cutting performance. It keeps the charm of a rustic handmade knife, but with performance that feels much more dialed in.
Still handmade — still perfectly imperfect. Expect light hammer marks, small inconsistencies, minimal machine finishing, and natural handle wood variations. These details are part of the Dao Vua identity. They are not factory-perfect knives, and we usually don’t recommend them as gifts unless the person already understands and appreciates the look of a truly handmade knife.
The Sujihiki Sakimaru is easily recognized by its katana-inspired tip. Originally designed for long, clean slicing tasks like sashimi, it has also become popular for brisket, smoked salmon, ham, roasts, and other proteins where a long blade helps create smooth, thin slices in a single motion.
If you want to try carbon steel without jumping straight into high-end Japanese pricing, the Dao Vua V4 Sujihiki Sakimaru is one of the most interesting entry points available. It is reactive and will patina quickly, but that is part of the charm — and part of learning how a real carbon-steel knife behaves.
