The Daido steel series are made in Seki, Japan with DSR-1K6 high carbon stainless steel. This excellent budget friendly blade contains 0.6% of carbon and added molybdenum. The blade finish "Tsuchime" can make foods release quickly from the blade.
Traditional Deba knives are know to be single-bevel and is commonly used to cut fish heads in half. Similar to the petty, but slightly different in shape, these smaller Deba's are ideal for small precision tasks that need an razor-sharp and pointy blade.
