This 210mm Kiritsuke is a true one-of-one custom configuration, assembled and finished here at Kakushin’s Knife Shop. There is only one like it.
Developed in collaboration with Nguyên in Hanoi, Vietnam, this piece carries the bold geometry and distinctive forging style that define his work. At 210mm, the Kiritsuke offers a compact and agile feel while still maintaining the presence, heel height, and authority expected from this profile.
The long, relatively flat cutting edge makes the knife exceptionally efficient for push-cutting and precision prep, while the aggressive Kiritsuke tip gives excellent control for finer slicing and detailed work. Added heel height provides comfortable knuckle clearance and stability on the board, creating a knife that feels substantial without becoming cumbersome.
At the core is 52100 carbon steel, selected for its excellent sharpening response, refined edge potential, and strong real-world cutting performance. Thin behind the edge and ground for efficiency, the blade delivers the clean, confident cutting feel that carbon steel enthusiasts tend to appreciate immediately.
Surrounding the core is a striking copper San-Mai construction. Copper and contrasting steel create depth throughout the blade, while distinctive X-shaped details appear within the pattern, giving this particular piece a look that is immediately recognizable. Depending on the angle and lighting, the copper shifts in tone and the layered construction reveals even more character.
For this 1 of 1 build, we selected a custom stabilized Amboyna wood handle infused with dramatic blue and green patterned tones. The natural burl figure of the Amboyna remains visible beneath the stabilization, while the blue and green coloring moves through the wood in irregular patterns, creating depth and contrast that changes from every angle.
The combination works especially well with the blade. The warmer tones of the Amboyna and copper San-Mai are contrasted by the cooler blue and green details in the handle, creating a configuration that feels bold and artistic without losing the natural character of the materials.
Because both the wood grain and stabilized pattern are completely unique, this exact handle cannot be duplicated. Combined with the copper San-Mai construction and distinctive X-patterned blade, the result is a knife with its own unmistakable identity.
