The Midori No Hōseki is design thick at the spine with a robust feel in the hand and a forward facing balance which allows precision slicing, dicing and cutting which is essential in Asian cuisine, particularly when crafting sushi. With less chrome compared to the well known 440C steel, this knife is hardened to 60 HRC to help with edge retention on this extremely sharp single bevel yanagiba. 

Yanagiba knives are known to easily slice boneless fish fillets for Sashimi and Sushi dishes, but they can also be used to fillet fish. When preparing sashimi and nigiri sushi, the goal is usually to have cut surfaces that are smooth, shiny, and even in order to maximize the taste; the narrow blade and relatively acute edge angle of the Yanagiba provides those elements.
