Suijihiki Sakimaru knives are easily differentiated due to their Katana like blade tip (Sakimaru). Designed as a sword for tasks that require a long blade to slice thin, it's well known by sashimi enthusiasts. It had been popularized in America and now even used as a utility slicer for briskets, smoked salmon, ham and other meats.
