This 210mm Gyuto marks the beginning of a new series of one-of-one customs developed with our friend Tu Manh in Vietnam, a highly skilled bladesmith whose specialty lies in complex Damascus work.
For this first run, we wanted to push him beyond traditional patterns and challenge him with designs we felt would really stand out. The idea was simple: combine Tu Manh’s ability with layered steel and our own vision for materials, patterns, and final configurations to create knives that feel completely different from standard production pieces.
This particular Gyuto features a striking Copper and Bronze Damascus construction, creating warm metallic tones and intricate movement throughout the blade. Copper and bronze interact differently with the surrounding steel, producing layers of color, contrast, and texture that reveal more detail depending on the angle and lighting. It is a blade designed to be looked at just as much as it is meant to be used.
At 210mm, the Gyuto remains one of the most versatile formats in the kitchen. It offers enough length for proteins, larger vegetables, and volume preparation while remaining agile enough for precise slicing and detailed work. The familiar Gyuto profile makes it an extremely capable everyday chef knife, but the Damascus construction gives this particular example a presence far beyond an ordinary working blade.
Once the blade arrived from Vietnam, we completed the final configuration here at Kakushin’s Knife Shop, carefully finishing and assembling it into a true 1 of 1.
For the handle, we chose a custom epoxy construction infused with natural pine cone, creating an organic pattern suspended within the resin. The pine cone brings texture and natural variation to the handle, while the epoxy gives it a much more contemporary appearance. A translucent epoxy tip completes the design, adding depth and allowing light to pass through the end of the handle for another subtle visual detail.
The contrast between the warm Copper and Bronze Damascus and the organic pine cone suspended within the epoxy works exceptionally well. Both the blade and handle contain patterns that can never be reproduced exactly, making the entire configuration naturally unique before the final assembly is even considered.
This is the type of project we wanted to create with Tu Manh: technically ambitious Damascus blades paired with equally distinctive custom handles, then finished and assembled here at Kakushin.
