Forged in the Tosa blacksmithing tradition of Kochi Prefecture, this knife carries the rugged charm and performance that the region is known for. The Kurouchi finish — a dark, rustic layer left from the forging process — not only gives the blade a distinctive, traditional look but also adds a bit of extra protection against rust.
At its heart is Aogami #1 (Blue Steel), a high-carbon steel enriched with tungsten and chromium. This blend delivers outstanding edge retention and the kind of razor-sharp performance that makes it a favorite among serious cooks. It’s harder than most steels, which means it can take on tough prep tasks with ease — but also demands proper care and skill when sharpening.
Tosa blades are crafted through a process where steels of varying hardness are heated, hammered, and straightened entirely by hand. This traditional forging technique results in knives that resist bending and chipping while maintaining exceptional sharpness. The final hand-sharpening step ensures a smooth, precise edge, ready to handle everything from delicate vegetables to dense cuts of meat without hesitation.
