Hand-forged by Toru Tomura and sharpened by Tateo Myojin in Kochi, Japan, this 150mm Kiri-Deba is built for fish work with precision and power. It takes the traditional Deba profile and adds a Kiritsuke-style tip for extra finesse—perfect for breaking down whole fish, filleting with accuracy, or making tight, detailed cuts near the bone.
Made from Aogami Blue #2 carbon steel with a raw kurouchi finish, this blade has a thick spine and a serious presence in hand. The single bevel grind (right-handed) offers precise control and ultra-clean cuts, especially on delicate proteins like fish. It’s a go-to style for sushi chefs and fishmongers for a reason—less resistance, more accuracy.
Sold as a blade only, ready to be customized with the handle of your choice. Pick one from our selection and we’ll assemble it for you right here at Kakushin—or grab it bare and make it your own.
