For our meat amateurs and home butchers, we wanted something special — a boning knife that keeps the handmade charm but brings a bit more durability and rust resistance. So we had a small custom batch forged in 440C stainless steel, paired with a striking copper San-Mai layer that gives the blade a warm, almost molten look.
At 160mm, it’s the perfect size for trimming, cleaning up cuts, and removing fat or soft tissue without fighting the blade. It’s not meant for going through bones or prying hard joints — this design leans toward finesse rather than brute force. The benefit? A tougher stainless steel core that shrugs off moisture, stays clean longer, and still takes a beautifully sharp edge.
With a firm, no-flex profile and a clean taper toward the tip, these blades are built for precision work where you don’t want any bend.
