Shun Kanso Paring 90mm
The paring knife is a compact yet incredibly versatile tool, much like the chef's knife. Its name comes from its primary purpose—"paring" or removing peels, pits, and other unwanted parts from fruits and vegetables. It’s perfect for precision tasks like peeling, coring, trimming, and decorative work. The small size allows for excellent control over the blade's tip and edge, while the handle’s design ensures a comfortable, secure grip.
Crafted from AUS10A steel with added vanadium, this blade delivers a razor-sharp 16° edge on both sides. Its high carbon content enhances strength, corrosion resistance, and overall durability. The handle, made from Tagayasan wood (also known as wenge or "iron sword wood"), is not only beautiful but incredibly hard and dense, designed for a confident grip. The knife's full-tang construction provides a well-balanced feel and long-lasting durability, and each one is handcrafted in Japan to guarantee top-notch quality.
