The Yorokobi 240mm Kiritsuke takes the same high-end foundation as the Gyuto version, but pushes the overall look and feel into something even more aggressive and collector-oriented. Created through the collaboration between Nigara Hamono and Hatsukokoro, this is the kind of knife that immediately separates itself from standard production pieces the second you pull it from the saya.
Forged in Japan around an SLD semi-stainless core, the blade delivers the sharpness and edge life people expect from high-performance Japanese knives, while staying noticeably more forgiving than many ultra-hard carbon steels. It has that crisp, precise cutting feel on the board, but without demanding constant maintenance or babying during daily use.
What really defines this Kiritsuke visually is the exposed core line near the upper portion of the blade. Instead of fully hiding beneath the darker finish, the core steel rises through the surface and reveals flashes of the Damascus structure underneath, creating a layered transition that gives the blade a completely different depth depending on the angle and lighting. Combined with the darker forged tones and textured bevel, the contrast feels intentional, sharp, and highly refined without becoming overly flashy.
The Kiritsuke profile itself brings a more technical personality compared to a traditional Gyuto. The extended flat profile, aggressive reverse tanto tip, and longer overall length make it exceptional for precise push cuts, detailed tip work, and clean slicing through proteins and larger ingredients.
