Fillet knives are typically used to removing very intricate bones from meat. Most often used with fish and other soft meats, the thinness of the blade allows you to easily maneuver between the layers of the meat. A fillet knife can either be stiff, or flexible to be be curved all depending on your cutting style and preference. The pointed sharp blade tip assists with piercing, allowing you to get to any bones with ease.
