The combination gives the traditionally understated Yoshikane blade a completely different personality, adding colour, depth and individuality while still keeping the overall knife refined and balanced.\u003c\/p\u003e\n\u003cp\u003eHand-forged in Sanjo, Japan, the blade uses SKD semi-stainless steel hardened to approximately 63 HRC. SKD is loved because it sits in a very practical middle ground: it offers much of the sharpness, feedback and edge retention people enjoy from carbon steel, while being considerably easier to live with day to day.\u003c\/p\u003e\n\u003cp\u003eThe Nakiri profile is purpose-built for vegetable preparation. Its tall rectangular blade provides excellent knuckle clearance and a stable feeling on the board, while the long, relatively flat edge is ideal for push cutting, chopping and precise vegetable work.\u003c\/p\u003e\n\u003cp\u003eLike many Yoshikane knives, the geometry is one of the real highlights. The spine starts at roughly 4mm near the heel, giving the blade some presence and rigidity, before tapering significantly toward the front. Combined with Yoshikane's thin geometry behind the edge, the result is a knife that feels substantial in the hand without feeling heavy or cumbersome through ingredients.\u003c\/p\u003e\n\u003cp\u003eThe nashiji finish keeps the blade traditional and understated, with a soft textured surface that fits perfectly with Yoshikane's Sanjo character. Rounded and polished work around the spine and choil adds another level of refinement and makes the knife immediately comfortable in hand.\u003c\/p\u003e\n\u003cp\u003eWhat makes this particular piece different is the final assembly.\u003c\/p\u003e\n\u003cp\u003eRather than using the standard olive wood handle normally paired with this blade, we selected Custom Handle #771 from our collection and installed it in-house. The stabilized wood and epoxy construction adds a much more distinctive look while maintaining the clean octagonal Wa-handle shape that suits the Yoshikane blade so well.\u003c\/p\u003e\n\u003cp\u003eBecause this exact handle was used for this assembly, this is a one-of-one combination.
