Handmade in Gotō on the island of Nagasaki, far west of Japan by Haruki Miyazaki-San, this authentic Hakata is a one of kind that has been fabricated from water quenched White Steel #2 which typically requires high skills from an experienced blacksmith - the traditional knife quenching consists of oil. White Steel #2 is known for having minimal impurities and a very fine grain structure, so it is ideal for fine blades. As the cherry on top of the sundae, the wrought iron cladding gives it a very beautiful pattern. Read more about traditional Kurouchi finishes here.
A type of Japanese bunka, and is characterized by its broad, rectangular-shaped blade with a slight curve towards an aggressive tip. The blade is typically sharpened to a very thin edge, allowing for precision cutting and slicing. Often used for chopping vegetables, slicing meats, and even preparing fruits, it's a popular go-to chef knife,
One unique feature of the Hakata knife is its tall heel (wide blade), which allows for the user to use a rocking motion while cutting more than a bunka that would have some resemblance. Overall, the Hakata knife is a highly-regarded and versatile tool in Japanese cuisine, and its unique shape and history make it a favorite among both professional chefs, home cooks and even Japanese knife collectors.
