Handmade in Miki, Japan, Okeya knives are crafted by a Father and Son from Ginsan #3 Silver Stainless Steel. Incredibly well priced, they offer an amazing value for your money. Finished with a unique Tsuchime (hammered) finish, they are hardened to 61 HRC to hold a great edge without being too brittle. With a thin grind behind the edge, they start at 2mm thick at the spine.
Petty knives are a mix between slicing and paring knives known as the ideal blade for most food preparations that require added precision. They feature scalloped edges and blades that are slightly longer than standard paring knives.
