This is the new and improved version 2 series following Dao Vua's popular classic series. Made from mono Carbon Steel, they are ideal for anyone looking to make a step forward into the world of Japanese Carbon Steel knives but are skeptical about the care level on a knife that could break the bank. With a highly performant but reactive blade that requires care, they are known as the best selling knives under 100$ and often compared to steel performance of White #2, the V2 series is a no brainer.
Being 100% handmade, the Classic V2 series features a finish that must be appreciated by it's owner - while they show their the true handmade characters and each knife is slightly different, they are considered an ideal platform for anyone looking to experiment sharpening, thinning or even polishing carbon steel.
This big cleaver is designed in a Nakiri style, with a thin blade for precise cutting leaving tons of room for your knuckles. It it not designed as a traditional cleaver to cut and wack through bones and other solids.
Nakiri knives are highly known for their long and flat blade. They tend to be fabricated with a higher heel compared to other models and are extremely popular for chopping vegetables. They are the ideal candidate for cutting long veggies in a single chop, but also great for a push or pull cut into harder vegetables. The square shape allows you to easily grip your fingers around the handle with no fear of busting your knuckles when chopping your vegetables.
Many chefs that regularly work with vegetables and fruits consider their Nakiri a primary knife in the kitchen.
